A new fine-dining restaurant will open in November inside the Ford Amphitheatre in Colorado Springs, featuring private dining rooms, elegant cocktails and skyline views.
Roth’s Sea and Steak
J.W. Roth, the founder of Venu Holding Corp., which owns the Ford Amphitheatre, has wanted to open a fine-dining restaurant since the venue opened. A fifth-generation Coloradan and business leader in the community, Roth founded Venu in 2017.
The Ford Amphitheatre opened in August 2024 and has a capacity of 8,000 seats. The venue features a variety of seating options, including luxury suites with gas-powered fire pits, a full menu of cocktails and other food options.
Now, guests will have a chance to enjoy a full-service dining experience at Roth’s Sea and Steak.
“This isn’t just dinner — it’s a five-star experience, curated down to the last detail,” the restaurant’s Instagram page states.
The restaurant will be led by Executive Chef Ricky Biswas and General Manager Jeroen Erens, who both have spent time working at Michelin-starred restaurants. The menu will feature a tomahawk steak, A5 wagyu tartare, Mediterranean-inspired sea bass, veal Wellington and more. Options will evolve year-round, depending on what’s in season.
The beverage program consists of a cocktail menu and curated wine list, with an emphasis on family-owned estates and small producers. The debut offering in the “Roth Cellar Selection — The Founders Cut” wine series will be a Napa Valley blend. Beer offerings will come from local breweries.
Roth’s will also provide a “Chef’s Counter” experience, seating eight customers facing a special kitchen for a seven-course tasting menu paired with wine.
Roth’s Sea and Steak is located at 95 Spectrum Loop. The restaurant will be open for dinner Sunday through Thursday.
