A new English pub, The Brit Pub, brings the flavors of Great Britain across the ocean. It opened Oct. 24, featuring an extensive food and drink menu and British hospitality.
Inside, customers see a cozy space decorated with an iconic red telephone booth, British flags and a portrait of the late queen. All the furniture was flown in from England and arranged to create a welcoming atmosphere for guests to linger as long as they’d like over a pint or a cup of tea. The British paraphernalia all over the walls makes the room feel like it’s a portal straight into the city of London.
The Brit Pub
Pub culture in England is a defining part of daily life. After work, it’s common for people to head to a nearby spot for a beer, spending the evening chatting by the fire. The Brit Pub is designed to cultivate that same sense of community in Colorado Springs.
Executive chef Phil Griffin serves a variety of traditional English dishes. Griffin’s menu is built for winter: warm, rich and comforting. He previously worked as second chef under renowned London chefs at Michelin-starred establishments. His skill brings authenticity to dishes like full English breakfasts, fish ’n’ chips, meat pies and hearty Sunday roasts.
The kitchen serves brunch and dinner. Morning highlights include the Full Monty — a traditional English breakfast with house-cured black bacon, black-and-white pudding, pork sausages, baked beans, grilled tomato, bubble and squeak, mushrooms and two eggs with toast.
For those less familiar with some dishes: black-and-white pudding refers to puddings made with (and without) blood, respectively; bubble and squeak is a comforting mix of cabbage and potatoes. Other breakfast items include a breakfast pie with sausage, eggs and potatoes; salmon Wellington wrapped in crisp filo dough; and Welsh rarebit (melted cheese on toast).
Dinner options include sausage rolls, generous portions of chips (fries), and Scotch eggs — boiled eggs wrapped in sausage meat, coated in breadcrumbs and fried. The menu also features meat pies, seafood, and a few Indian dishes, reflecting Britain’s culinary diversity. On Sundays, guests can order traditional roasts like prime rib with roasted potatoes, honey-thyme parsnips and Yorkshire pudding — perfect for a cold winter’s day.
The pub sits across from Weidner Field (home of the Colorado Springs Switchbacks), making it an easy stop before or after a match. The Brit Pub plans to host live music and other events — board games, quiz nights, and more — to build a genuine British-pub vibe. Drink offerings include imported ales, British-style cocktails, and traditional pints.
As the winter season settles in, The Brit Pub hopes to become a go-to gathering place for anyone looking to unwind somewhere warm, enjoy proper British fare, and catch a footie match or Sunday roast with friends.
