A new style of dining has swept the Springs off its feet: the supper club. Hosted by a variety of restaurants in the area, the supper club offers a new format of dining that feels elegant while keeping prices lower than a traditional tasting menu.

While longer prix fixe menus include many courses and a wine pairing, the supper club menu typically offers a choice of an appetizer, entrée, and some kind of dessert or final course.

Restaurant owners love the simplicity of the menu, which often comes with a large “No Substitutions Offered” slogan and a strict slate of options. It makes it easy to cater to a large crowd while maintaining a sense of sophistication.

Red Gravy hosts a supper club on the second Sunday of each month. The menu changes each month “based on seasonality of ingredients and our chef’s inspiration,” according to their website. They serve four courses, each complemented with a wine pairing and an explanation of the dish’s components. Past menus have included mushroom ravioli, branzino, and blueberry gooey butter cake ice cream. The meal costs $150 per person, wine or spirits included.

Baon Supper Club is run by Chef Kati Fisco, who creates immersive dining experiences for private clients focused on Filipino food. The word “baon” means food for the journey in Tagalog. Fisco has created a series of events around Colorado Springs where customers can purchase tickets in advance to attend dinner. Most recently, she hosted “Itlog After Dark:” a pop-up dinner that flipped the script to serve breakfast for dinner. The menu included pork belly and garlic fried rice with a smoked egg, brioche toast with eggplant, and ube sweet bread topped with butter and cheddar. Tickets were $90, including a cocktail, five courses, and a small take-home offering. She runs pop-up supper clubs frequently, with announcements posted online.
