Egg Lush, a Korean-style egg sandwich restaurant, will host its grand opening Sept. 27. The restaurant held a soft opening Aug. 4 and has since been serving breakfast sandwiches, burritos and an extensive drink menu.
WHERE TO GO
Egg Lush · 1025 S. Sierra Madre St., Colorado Springs · Open daily 7:30 a.m.–2:30 p.m.Rachael Nam, founder and CEO of Egg Lush, was inspired by the idea that breakfast should be both comforting and elevated. She wanted to bring a modern, playful twist to a classic meal.
Her egg sandwiches are thick, fluffy and decadent, with scrambled eggs piled high on brioche buns. Customers can add bacon, avocado, cheese, Salisbury steak and other toppings. The drink menu features iced and hot creations, specializing in matcha with a variety of toppings. The restaurant also offers jellies to add to drinks, thick cream for the top and an assortment of fruity flavors.
The sandwiches are reminiscent of the Korean-style egg sandwich that has taken the internet by storm. Egg Drop, a South Korean chain, went viral online for its fluffy sandwiches built with scrambled eggs, brioche bread and a creamy mayo-based sauce. It has inspired restaurants in New York and Los Angeles, and now Colorado Springs as well.
Social media has also played a large role in Egg Lush’s opening.
“It has allowed us to share our food in a fun, authentic way and connect with local foodies. Influencers and community supporters have amplified our story, creating real momentum after our soft opening,” Nam said.
While building the physical space and the identity of the brand, Nam said the restaurant faced challenges with staffing, supply chain issues and ensuring consistent quality of ingredients. Those challenges are not unique to Egg Lush and have contributed to turnover in the restaurant industry in Colorado Springs.
Although there are several brunch and breakfast restaurants in the Springs, Egg Lush is the only one specializing in the fluffy egg sandwich. The restaurant is also distinguishing itself through a pledge to donate 1% of all profits to local nonprofits supporting children who lack basic resources.
“We see Egg Lush expanding beyond Colorado Springs in the long term. But no matter how far we grow, our purpose remains the same: to serve food that brings comfort and to give back to children in need,” Nam said.
