Mochi Thai’M Donuts & Boba, the first mochi donut shop in Colorado Springs, is expanding to a third location and announcing plans to open a franchised location in Denver.
Co-owner and founder Sakeo Williams first launched the mochi donut business during the pandemic to make extra money after sales at her Thai restaurant stalled during the lockdown. The fresh mochi donuts, brightly colored, crunchy and chewy, were an instant hit in the Colorado Springs community.
“We drop our donuts fresh for every single order. That’s what makes us different. Most mochi donut shops have their donuts already pre-made in the morning and they’re sitting out in a display case. We don’t do that. Ours are always always hot and fresh,” says Williams.

Boasting a crispy exterior and soft interior, the treat is shaped into a circle formed of eight small spheres, easy to pull apart and share.
“The recipe originated in Hawaii. The Hawaiians turned the donuts into a hybrid with mochi from Japan and then Americanized them with all-purpose flour, but I make the donuts with straight mochi,” Williams said.
Mochi M’Thai’s donuts are naturally gluten free, since they’re made with rice flour or tapioca flour. When Williams realized the appeal her donuts had for the gluten-free community, she took steps to ensure the kitchen would be completely celiac-friendly.
The new Mochi Thai’M location will be on the south side of the city, complementing existing shops on the north and east sides. The store is expected to open in October. Williams said a partner is also interested in opening a franchised location in Denver.
Their growth and success can be partially attributed to an ever-changing menu. Every week, Williams develops four new flavors of donuts, keeping the menu constantly rotating. She draws inspiration from what’s trending and what’s in season. If it’s strawberry season, the kitchen will offer a strawberry glaze, or pumpkin spice to celebrate autumn. Eight flavors are offered daily, including salted caramel, original glazed, churro, ube, cookies n creme, Thai tea, powdered sugar and chocolate.
